A little puzzled with my Novarossi P5XLT

My p5xlt has me a little confused. The engine is broken in with almost 2 gallons through it. I just put a new clutch and bearings in it and drove some today and have some questions.

I am using a tuning flow chart that I downloaded from one of the members here many years ago I cannot remember his name but the chart has been helpful.

I preheat my vehicle to 200

I use 90 degrees above ambient as a rough guide.
